Fish processing

The processing of fish needs to consider the highly perishable nature of the produce, the levels of flora found both in the water and on and in the fish.

Processing can be divided into different sections; fish handling, which is the preliminary processing of raw fish, and the manufacture of fish products involving filleting and the freezing of fish for retail and catering, as well as chilled, frozen and canned products.

Through every processing stage, it is important to be mindful of the various types of flora which could potentially spoil the product. The natural flora on the skin of fish may be very different to that found in the gut and varies between fish and filter feeders such as Mussels and Oysters.

Utilising medium pressure washdown systems for foam application and rinsing will help remove the debris commonly left as part of the fish processing process.
